We are looking for a Junior Biotechnologist (f/m/d) to work on the future of our venture, BettaF!sh. Our mission is to protect scarce resources, increase biodiversity, and make new plant life available to the food industry. As an award-winning alt seafood company, we create fish and seafood alternatives that have a positive impact on the world. Internally, we are a tech-enabled seaweed house, developing next-gen ingredients to enhance sensory properties, improve nutritional value, and reduce costs and resource input.
YOUR RESPONSIBILITIES:
If you're passionate about crafting extraordinary culinary innovations, your skills in food science and biotechnology will be key in creating products that resonate with both consumers and B2B customers. In your first year, you'll help us create plant-based products using unique seaweed ingredients, aiming for taste and nutrition characteristics identical to animal-based options. You'll use your expertise in product development and bioprocessing of ingredients with a focus on flavor compounds and plant-based proteins. Your responsibilities include:
- Create the next-level ingredients and influence the development of the plant-based food industry through innovations
- Independently conduct experiments and research to explore the biochemical and functional properties of different seaweed species
- Bring new ideas to the table for further research by developing and optimizing bioprocesses for innovative high-quality ingredients
- Organizing, supporting, and documenting internal and external experiments
- Assist the R&D team in designing and evaluating food products with a focus on the development of seaweed-based ingredients
WHAT YOU NEED TO BE GREAT AT THIS JOB
- You hold a Master's Degree in biotechnology, food technology, food chemistry, or a related field and recent graduate from university (max. 24 months after graduation)
- You possess a strong food science background with a focus on alternative proteins and/or flavor compounds
- previous laboratory experience is essential
- you have a solid understanding of extraction methods or fermentation processes as well as a basic understanding of characterization techniques
- passion for sustainability and interest in exploring innovative seaweed solutions
- You're fluent in English, German is a plus
